Pork Chops with Apple Potato Turnover

Ingredients                                                                                                                                        Serves 3

  • 3 pork loin chops

Apple Potato Turnover ingredients

  • 1-pound potatoes
  • 2 apples, grated, (leave on peeling); set aside in a bowl of cold water & 2 teaspoons of lemon juice
  • 1-cup all-purpose flour
  • 1/2 cup butter
  • Canola oil for sautéing

 Apple Chutney ingredients

  • 4 apples, seeded & cut into 1/4 inch cubes
  • 1 onion, chopped
  • 2/3 cup sugar
  • 3/4 cup raisins
  • 1/2 cup brown sugar
  • Salt pepper
  • 1/2 teaspoon ginger

Method for Apple Chutney

Put all ingredients in a heavy saucepan and bring to a boil, immediately reduce heat and simmer until mixture has thickened.  Remove from heat and set aside.

  1.        Boil potatoes in lightly salted water until tender, drain and set aside.
  2.        Make Apple Chutney and set aside.
  3.        Have pork chops and grill pan ready
  4.        Begin Apple turnovers
  5.        While turnovers are in the oven, begin grilling pork chops

 Method for the Apple Potato Turnover

Mash the cooked potatoes in a mixing bowl. Add butter, flour, and mix until smooth. Season with salt and pepper, to taste. Sprinkle a little flour on a board and roll out dough.  Cut into 5- to 6-inch circles.

Preheat oven to 425 degrees.

Drain the grated apples.  Place 1-2 tablespoons of grated apple filling in the middle of each piece. (Too much filling will cause the edges of the pastry to open as they sauté) Lightly moisten edges of pastry with water. Fold pastry over to form semicircles and seal edges. Heat an ovenproof skillet to medium-high; add oil and sauté potato turnovers on the first side until golden brown on the bottom. Gently flip the turnover in the skillet, sauté for 1 minute then place the skillet in the oven to finish the cooking process. Bake to 4 -6 minutes or until crispy on both sides and fully cooked, but not dried out.  (Oven temperatures vary; adjust as needed)
